its been quite a long time since i last posted a text post about food and/or work. So here’s the lo-down on what’s been going on. In current affairs in the restaurant we had a recent menu change. Some of the dishes are really good and others I feel are a bit much. par-cooking a duck breast then wrapping it in a leaf takes too long, especially when you’re in the shits.

Are chef team has had a lot of changes recently. Two new sous chefs and a new chef in the last year and things are starting to look better with this crew.Although our newest sous chef hasnt quite gotten her sea legs for our kitchen yet. I hope she gets there soon because her expo skills are lacking. Our all days are always missing a ticket or an order and the cooks are constantly playing catch up. She’s good for the most part with everything else and has improved a lot since she started.

And as for me im still sitting on the fence post between cook and sous. I’m able to do everything the sous chefs can do and everything the cooks can. I’m always bouncing in between. Either working the line, preping, or running the kitchen. Its a fun balance but is stressful at time. I feel as though everyone forgets that im not one of the chefs and expects the same things from me. Which has its goods and bads. its just a matter of time. All in all everything is a lot better for me here and I’ve gotten more badass as a cook with a few more battle scars to prove it.
